About the estate:
Xavier Gonet set up his own business in Bisseuil, a premier cru in the Marne Valley, with his wife Julie, née Médeville, of Château Gilette in Sauternes. They have a unique selection of vineyards: the family’s contribution of great Chardonnays from Mesnil-sur-Oger (Louvière, Champ d’Alouette), fine Pinot Meunier (Mareuil) and Pinot Noir (Ambonnay and Bisseuil) wines. To ensure the wine retains its liveliness as it ages, malolactic fermentation is halted. An increasingly significant portion of the base wines also ferments in barrels, which enhances the fineness of the bubbles. We appreciate the perfect consistency of this distinctive range, a fitting reward for the coordinated efforts in viticulture and winemaking.
