About the wine:
Definitely one of Errazuriz's best white wines. I love wines with personality, and this dry white wine has plenty of it. It's a bright, explosive Chardonnay whose grapes come from the Manzanar vineyard, located just 12 km from the Pacific Ocean. The cool climate of this vineyard, combined with the composition of the soil composed of schist and clay, gives this wine a remarkable elegance. We also recognize the originality of the wild yeasts used for fermentation, which takes place in low-temperature French oak barrels. Very interesting aromatic intensity, with aromas of apples, papayas, honey, limes and crunchy pears, enhanced by mineral and floral notes. Superb vivacity, persistence and impeccable balance! Serve at 12°C. Ideal with shrimp brochettes, cabbage cigars, Asian-style pork stir-fry, pork tenderloin glazed with mustard and maple, or sablefish fillet.
