The 2020 Salinas Sauvignon Blanc was produced with grapes from vines planted in 2008 nine kilometers from the sea, where they benefit from the influence of sea breezes and marine soils. Grown organically during the hot, dry pandemic year of 2020, the grapes reached good maturity and the wine has an alcohol content of 13%, with a notable absence of pyrazines. It has more fennel and aniseed and a medium-bodied palate, but is smooth due to 12 months spent on the lees, stony, with a chalky texture and a salty sensation. It has very good freshness and a pH of 3.14. It was fermented and aged in 50% oak barrels and 50% concrete eggs.
