"The 2020 Salinas Sauvignon Blanc was made from grapes grown on vines planted in 2008, nine kilometers from the sea, where they benefit from the influence of the sea breeze and marine soils. Grown organically during the hot, dry pandemic year of 2020, the grapes reached good ripeness, and the wine has an alcohol content of 13%, with a notable absence of pyrazines. It has more fennel and anise notes and a medium-bodied palate, but it is creamy due to the 12 months spent on the lees, stony, with a chalky texture and a salty sensation. It has excellent freshness and a pH of 3.14. It was fermented and aged in 50% oak barrels and 50% concrete eggs.
