“The 2020 Fosiles red was made from Pinot Noir grapes grown in vineyards located about nine kilometers from the sea on marine soils, with a strong influence from the ocean’s salinity. The vineyards are now certified organic. The grapes fermented with native yeasts, with 50% whole clusters in open tanks, which, in 2020, gave it more freshness—necessary due to the hot year—and aged in large oak barrels for 14 months. The wine exhibits restrained maturity and alcohol (13.5%), despite the year’s conditions, low yields, and small clusters, with good freshness and varietal character, red fruits, cherries with a spicy touch, purity, clean and concentrated flavors, and a long, savory finish.
