“The 2020 Fosiles red was made from Pinot Noir grapes grown in vineyards located about nine kilometers from the sea on marine soils, with a strong influence from the ocean’s salinity. The vineyards are now certified organic. The grapes fermented with native yeasts, with 50% whole clusters, in open tanks—a process that, in 2020, imparted greater freshness, which was necessary given the hot growing season—and aged in large oak barrels for 14 months. The wine exhibits restrained ripeness and alcohol (13.5%), despite the year’s conditions, low yields, and small clusters; it offers good freshness and varietal character, with red fruits and cherries, a hint of spice, purity, clean and concentrated flavors, and a long, savory finish.
