The two grape varieties are vinified separately, fermented in temperature-controlled stainless steel tanks, and macerated for an average length of time using Benanti's indigenous yeasts (selected from local vineyards through years of research and experimentation in the cellar).

Aged for 2 to 3 months after bottling

Livestock farming

For 8 to 10 months, for the Nerello Cappuccio 100% in stainless steel vats, and for the Nerello Mascalese: 80% in stainless steel vats and 20% in French oak barrels.

Mouth
