Complete destemming in the cellar, fermentation and maceration in temperature-controlled stainless steel tanks (for 21 days), exclusively with yeasts indigenous to Etna (selected by the estate after extensive direct experimentation).

Refined for 10 months after bottling

For 12 months in old French oak barrels, then some time in stainless steel vats.

Nose

Intense and spicy, with scents of ripe red fruit, notably strawberry and black cherry, enhanced by notes of dried grass, crushed volcanic stone and violet.

Mouth

Ample and mineral, dense and elegant texture, great freshness balancing perfectly with the tannins, beautiful complexity of aromas to which are added flavors of exotic spices, and long tasty and licorice finish.

The 2022 Etna Rosso Contrada Calderara Sottana reveals aromas of dried fruit and blackcurrant, with hints of pressed rose and crushed volcanic rock. The fruit comes from a hectare on the northern slopes of Mount Etna, at an altitude of 685 meters, with soils rich in organic matter. About the wine:

In the Calderara Sottana style, Etna Rosso Contrada Calderara Sottana 2022 exudes bewitching, mineral aromas of crushed ashen stone, grilled herbs and dusty blackcurrant. It's soft and enveloping, yet possesses a powerful core of dark red fruits, complicated by exotic spices. Firm tannins rise towards the end. Although young and intense, the 2022 retains a wonderful freshness thanks to a lively acidity that gives it relief and fading notes of mint and licorice. It really packs a punch, but also has the balance to age well. 2026-2034
