The two grape varieties are vinified separately, with fermentation taking place in temperature-controlled stainless steel tanks and a medium-length maceration period facilitated by Benanti’s indigenous yeasts (selected from local vineyards through years of research and experimentation in the winery).

Aged for 2 to 3 months after bottling
