Both grape varieties are vinified separately, undergoing fermentation in temperature-controlled stainless steel tanks, with a moderate maceration period facilitated by Benanti’s indigenous yeasts (selected from local vineyards through years of research and experimentation in the cellar)

For 8 to 10 months, for the 100% Nerello Cappuccio in stainless steel tanks, and for the Nerello Mascalese: 80% in stainless steel tanks and 20% in French oak barrels
