Sorting, destemming, and gravity-fed transfer to the vat to preserve the grapes’ full quality and integrity. Natural winemaking without any chemicals or oenological additives. Fermentation lasts 3 weeks at a low temperature (20°C) for slow extraction, without punching down or racking.

About the estate:

Emmanuel Taillez is now the sole owner and manager of the estate. The vineyards are cultivated using biodynamic methods (certified in 2013), supplemented by a portion of purchased grapes. Benefiting from high-quality aging, these meticulously crafted wines develop a beautiful diversity of flavors: they are the most lively and refined cuvées of the appellation. We also note that the estate offers lovely guest rooms.
