Cabardès
The Cabardès appellation, located near the city of Carcassonne and the Canal du Midi, stands out as a unique region within Languedoc. Its geographical location lies at the crossroads of Mediterranean and Atlantic influences, offering mild temperatures on one hand and humidity on the other. Situated on hillsides (100 to 350 meters above sea level) in the foothills of the Montagne Noire, the soils consist of limestone pebbles that retain heat, and higher up, they also contain gneiss, schist, and granite.
Another distinctive feature is the vineyard’s high proportion of Bordeaux grape varieties blended with traditional Grenache and Syrah. Red wine production dominates (85%), followed by rosé (15%). The wines are concentrated, aromatic, and complex, expressing notes of garrigue, black fruit, and licorice.
