About the estate:

Born into an illustrious British family—his father, Anthony Eden, was a minister under Winston Churchill before succeeding him as Prime Minister—Robert Eden, after working in numerous vineyards around the world, purchased Château Maris in Minervois in 1997. This avant-garde figure and staunch advocate of organic and biodynamic farming built a traditional lime and hemp brick cellar, equipping it with ovoid vats where the wine matures slowly.

Perfect with lamb stew after an hour in a carafe. It probably needs to wait a little longer.
