About the estate:

After extensive studies in biogenetics, ampelography, and oenology, Cyril Bourgne began his career in Bordeaux (Château de Fieuzal) before embarking on a more personal wine-growing adventure in Languedoc with his wife Nadia. The vineyard is meticulously maintained, allowing for the extraction of long, fine flavors during the vinification process, which now takes place in the new cellar nestled in the Saint-Chinian landscape. The precision of the barrel aging process, implemented for the Grand Vin cuvée, which is predominantly Syrah and Mourvèdre, aims to renew the contemporary expression of Saint-Chinian.

Favorite this natural vintage, with decidedly southern accents that lack neither freshness nor elegance. The palate is slender, round, and deep, enveloped in a dense, fleshy texture consisting of an extremely complex coulis of wild red and black fruits, perfectly ripe and slightly macerated, with subtle animal notes, black olives, and dried herbs mixed with aromas of thyme and bay leaf. Backed by caressing and subtly wild tannins, the texture provides a particularly smooth, sweet sensation and evolves into a long finish, complemented by a hint of zan and chocolate. This remarkable Saint-Chinian, with its slightly tight tannic structure, is still developing and should mellow quickly. Taking advantage of the opening of the hunting season, impatient people like me will be eager to open this rich and expressive bottle without delay to enhance a delicious wild boar stew with scents of the maquis, marinated two days in advance and simmered for two hours, accompanied by polenta with young cep mushrooms from the Cévennes. Rating = 4.2.
