About the estate:
After completing advanced studies in biogenetics, ampelography, and oenology, Cyril Bourgne began his career in Bordeaux (Château de Fieuzal) before embarking, alongside his wife Nadia, on a more personal winemaking venture in the Languedoc. The vineyard is meticulously tended, allowing for the extraction of complex and refined flavors during winemaking—now carried out in the new cellar nestled within the Saint-Chinian landscape. The precision of barrel aging, applied to the Grand Vin cuvée—which is predominantly Syrah and Mourvèdre—aims to redefine the contemporary expression of Saint-Chinian.

A flavorful red with notes of roasted meat, warm spices, leather, dry earth, and a hint of violets. Medium-bodied, with fine tannins. Well-balanced, with a lively core of fruit at its heart and a fresh, peppery finish. Mourvèdre and Syrah made from organically grown grapes. Ready to drink now.

Favorite this natural wine vintage, with distinctly southern notes that lack neither freshness nor elegance. The palate—at once slender, round, and deep—is enveloped in a dense, full-bodied texture composed of an extremely complex blend of wild, perfectly ripe red and black fruits, slightly macerated, complemented by subtle animal notes, black olives, and dried herbs intertwined with aromas of thyme and bay leaf. Supported by caressing, subtly wild tannins, the texture delivers a particularly smooth, velvety sensation and evolves into a long, lingering finish, rounded out by hints of zan and chocolate. This remarkable Saint-Chinian, with its slightly tight tannic structure, is still developing and should mellow quickly. With hunting season now open, those of us who are impatient—myself included—will be eager to open this rich and expressive bottle right away to enhance a delicious wild boar stew with family, infused with the scents of the maquis, marinated two days in advance and simmered for two hours, served with polenta and young porcini mushrooms from the Cévennes. Rating = 4.2.
