The Protected Designation of Origin Quincy is a historic name for the Val de Loire, which celebrated the 70th anniversary of its AOC designation in 2006. The decree granting Quincy wines their appellation designation was indeed issued on August 6, 1936, following a lengthy process of selecting Sauvignon grapes within the vineyard. Quincy was thus the first AOC to be recognized in the Loire Valley.
The historic birthplace of Sauvignon, Quincy is characterized by its consistent terroir. Located primarily on the left bank of the Cher River upstream from Vierzon, the vineyard covers 270 hectares. The soils, dominated by sand and gravel, rest on clayey gravel layers situated atop the lacustrine limestone of the Berry region.
TheQuincy AOC applies only to dry white wines made from Sauvignon. The Quincy wines are fine wines distinguished by their citrus aromas, with hints of white flowers and pepper. How is Quincy white wine made?
The Quincy wine is made from 100% Sauvignon Blanc grapes. Regarding the terroir, it is important to note that the vines are planted on an ancient terrace in the Cher department. With light, gravelly, and sandy soils, the soil warms up more easily.As for the winemaking process, the grapes are pressed immediately upon arrival from the vineyard. The process is carried out slowly to ensure optimal juice extraction, and the juice is cold-settled. The clear juice is then fermented in temperature-controlled stainless steel tanks. Alcoholic fermentation must be closely monitored, and the temperature must be maintained between 18 and 22°C. At the end of fermentation, the wine is left on fine lees until spring arrives.
