Grapes are sorted grain by grain, crushed and destemmed, alcoholic fermentation with indigenous yeasts in temperature-controlled wooden vats, punching down of the cap twice a day for about ten days, racking into barrels after devatting and pressing, malolactic fermentation carried out.

Gérald Vallée farms 27 hectares of Cabernet Franc, all of which have been converted to organic farming, with all the care one can imagine: tilling the soil, thinning out the leaves... All the grapes are grown in the Saint-Nicolas de Bourgueil appellation. In the cellar, no yeast or enzymes are added to the vats.

Vau Jaumier has a chalky feel and straightforward tannins, guaranteeing a fine future.

About the domain :

The meticulous Gérald Vallée leaves nothing to chance when vinifying in wooden vats and ageing in barrels. His Cabernet Franc wines are full-bodied and seductive, with smooth tannins that make them accessible when young, but also with good ageing potential. Recent vintages have considerably enhanced the fruit, bringing them closer to the freshness of their terroir. The "fruity" cuvée La Croisée is made with spontaneity, while Les Perruches is tactfully styled in wooden vats to highlight the identity of these flinty clays. On Coteau du Vau Jaumier, the Cabernet Franc reveals an inimitable suavity and "sandy texture". And Postumus? A marvel of Cabernet Franc vinified in whole bunches, with citrus and rose tones, a wine out of the ordinary for the region, and for the rest of the world for that matter. The additional brilliance and freer, yet still very precise expressions invite us to award it our second star.
