In the process of converting to organic farming. Using biological pest control since 2018. Soil cultivation, natural grass cover, no chemical herbicides, no fungicides.

At optimal maturity

Wine Production

Long, gentle direct pressing (approximately 3 hours and 30 minutes) with separation of the juice and separate vinification. Racking after 48 hours of cold stabilization (8°C). Inoculation with a neutral yeast. Fermentation in temperature-controlled stainless steel tanks at 15° to 18°C for 3 weeks.

Livestock Farming

Aged on fine lees with stirring, racked and blended the following spring, clarified with bentonite (natural clay), filtered through cellulose plates, and bottled after adjusting the CO2 levels

Thiol, with notes of blackcurrant buds, citrus, and yellow fruits

Palate

Full-bodied, supple, mineral, and fruity. Harmonious and fresh.

About the estate:

Julien and Clément Raimbault cultivate 21 hectares on the hillsides of Maimbray and Sury-en-Vaux, in clay-limestone soils. Their very consistent lineup features well-rounded wines in both red and white, with reds that combine power and elegance and whites that are pure and refined. All at very reasonable prices. A sure bet.
