Long, gentle direct pressing (approximately 3 hours and 30 minutes), racking after 48 hours of cold stabilization, inoculation with a neutral yeast, fermentation in oak demi-muids (600 liters) temperature-controlled between 15 and 18 °C for 3 weeks

Livestock Farming

Aged for 12 months on fine lees with bâtonnage; racked and blended the following summer; clarified with bentonite (natural clay); filtered through a cellulose plate; and bottled after adjusting the CO2 levels

About the wine:

One hectare of Sauvignon grown on marl soil, aged in demi-muids—the result is a round, crisp wine, full of charm and impact.

About the estate:

Julien and Clément Raimbault cultivate 21 hectares on the hillsides of Maimbray and Sury-en-Vaux, in clay-limestone soils. Their highly consistent lineup features well-rounded wines in both red and white, with reds that combine power and elegance and whites that are pure and refined. All at very reasonable prices. A sure bet.

Over the past few vintages, we’ve been delighted to see a greater sense of freedom in the wines’ expression. They’re now more relaxed and indulgent, while retaining the precision that has become their hallmark. 2022, a sunny vintage, is a masterful balancing act! 2023, unsurprisingly, has produced wines that are more refined and elegant.
