Long, gentle pressing (approximately 3.5 hours), with separation of the juices and separate vinification, settling after 48 hours of cold stabilization. Yeast addition with neutral yeast, fermentation in 600-liter temperature-controlled demi-muids.

Livestock farming

12 months on fine lees with stirring in demi-muid barrels. Clarification with bentonite (natural clay), cellulose plate filtration, and bottling after CO2 adjustment.

About the estate:

Julien and Clément Raimbault represent the next generation of Sancerre winemakers: trained by the Pinard brothers and Alphonse Mellot, they cultivate the family's 21 hectares of vineyards on clay-limestone terroirs. The vines are grown according to organic farming principles (but without certification). The top-of-the-range wines, Les Chasseignes and Zeste for whites, and Camille for reds, come from the oldest vines planted on the best-exposed plots. The range is very consistent and successful in both colors: the reds combine power and elegance, while the whites are pure and refined. With very reasonable prices, this address is more than just a safe bet: it's a real Gem

About the estate:

The Raimbault brothers, Julien and Clément, embody the new generation of Sancerre winemakers. In previous editions, we highlighted wines that were clear, modern, and smooth, but perhaps a little too polished. Certain parameters need to be adjusted so that winemakers can break free from this technically flawless framework and offer a more vibrant definition of Sancerre. "We are delighted to see a greater sense of freedom in the expression of the wines. They are now more relaxed and indulgent, while retaining the precision that has become their trademark. 2022, a sunny vintage, is a balancing act! The pleasure experienced during tasting has earned the estate its first star.
