“A winter rosé worth discovering”
Rosé in winter? Absolutely! This rosé boasts incredible aromatic richness. Have fun tasting it blind—you might mistake it for a white wine. On the palate, it’s a true concentration of wild strawberries and roses, wrapped in a lovely minerality. This cuvée is perfect for experimenting with food and wine pairings; try it with sushi, red mullet in tomato sauce, sweet-and-salty dishes... This "saignée" rosé—which involves a few hours of maceration before extracting the lightly colored juice—can be cellared for several years. A unique wine worth discovering!

About the estate:
François Collard is a regular in the Guide, with his wines often ranking highly. Established in 1994, he began bottling wines from the family vineyards (65 hectares certified organic since 2014) under two labels: Mourgues du Grès, which belonged to the Ursuline convent of Beaucaire until the Revolution, and La Tour de Béraud, named after a 14th-century watchtower Never short on ideas, the Collard couple invites visitors to explore every facet of the estate via a marked trail equipped with Bluetooth markers.

Review by Mr. GILLES D. Published on 02/23/2024
Far from current standards, this rosé is dominated by the concentration of ripe fruit, accompanied by floral notes. More lively and dynamic than dense and full-bodied, it is supported by silky, spicy tannins and well-defined by a touch of minerality that counterbalances the power of its 14% alcohol content while also providing balance and plenty of smoothness. Well-structured enough to withstand a little more aging. This unique rosé will be a delightful companion for a starter of Scottish smoked salmon, or with a Bo bun salad featuring small spring rolls filled with crab and crispy shrimp. Rating = 3.7.
