François Collard is a regular in the Guide, with his wines often ranking highly. Established in 1994, he began bottling wines from the family vineyards (65 hectares certified organic since 2014) under two labels: Mourgues du Grès, which belonged to the Ursuline convent of Beaucaire until the Revolution, and La Tour de Béraud, named after a 14th-century watchtower Never short on ideas, the Collard couple invites visitors to explore every facet of the estate via a marked trail equipped with Bluetooth markers.

Far from current standards, this rosé is dominated by the concentration of ripe fruit, accompanied by floral notes. More lively and dynamic than dense and full-bodied, it is supported by silky, spicy tannins and well-defined by a touch of minerality that counterbalances the power of its 14% alcohol content while also providing balance and plenty of smoothness. Well-structured enough to withstand a little more aging. This unique rosé will be a delightful companion for a starter of Scottish smoked salmon, or with a Bo bun salad featuring small spring rolls filled with crab and crispy shrimp. Rating = 3.7.
