The destemmed grapes were placed in vats, where they underwent a 3-week fermentation with minimal intervention (2 punch-downs and pump-overs every 3 days) to allow the youthful fruit character to shine through.

About the estate:

Lucie and Nacy Fourel withdrew their vineyards from the cooperative winery in 2010, the year of their first vintage. Today, their 10 hectares are vinified using native yeasts and without SO₂, with more convincing results for their reds than for their whites.
