Winemaking

Fermentation takes place at low temperatures; once the wine reaches 6% ABV, it is bottled immediately. Fermentation then continues to produce the bubbles. This fermentation stops naturally at around 5–6 bar of pressure, 8% ABV, and approximately 45–50 g of residual sugar. This stage is reached about two months after bottling. Note that this fermentation takes place with the bottles standing upright. The sediment produced by fermentation settles at the bottom of the bottles and is removed by racking.

A beautiful balance of sweetness and acidity, with lovely bitter notes from the Poulsard. The wine exhibits great finesse overall. It has lovely effervescence and a very fine mousse.
