Winemaking

Fermentation takes place at low temperature, and when the wine reaches 6° alcohol, it is bottled immediately. Fermentation naturally stops at around 5 - 6 bars of pressure, 8° Vol. alcohol and around 45 - 50 g residual sugar. This stage is reached around 2 months after bottling. Note that fermentation takes place in upright bottles. The deposit caused by fermentation lies at the bottom of the bottle, and is removed by decanting.

Nose

Very complex, reminiscent of a multitude of red berries.

Mouth

Very fine sugar/acid balance, with the Poulsard contributing some lovely bitters. Excellent overall finesse. Very fine effervescence and mousse.
