Wine Production

Low-temperature fermentation: when the wine reaches 6° alcohol, it is bottled immediately. Fermentation then continues to produce the bubbles. This fermentation stops naturally at around 5–6 bars of pressure, 8° Vol alcohol, and approximately 45–50 g of residual sugar. This stage is reached about 2 months after bottling. Note that this fermentation takes place with the bottles standing upright. The sediment produced by fermentation settles at the bottom of the bottles and is removed by racking.

Extremely complex, it brings to mind the taste of a multitude of small red berries

Palate

A beautifully balanced blend of sweetness and acidity, with lovely bitter notes contributed by the Poulsard. The wine exhibits great finesse overall. It has wonderful effervescence and a very fine mousse.
