The ancestral method. This method produces sparkling wines naturally, without adding yeast or sugar. The still-fermenting wine is bottled, where it continues to ferment, producing bubbles and foam. The wine is filtered before final bottling.

Here, the Gamay grape expresses itself on the palate and on the nose, with notes of cherry, grape, raspberry, etc.... Beautiful effervescence, fine mousse, very fine overall.
