Winemaking

We use the ancestral method, a fermentation technique that allows us to produce sparkling wines naturally, without adding yeast or sugar. To obtain a beautiful rosé color and fine bubbles, temperatures are controlled at all times during vinification. The first phase takes place in thermo-regulated vats to start the fermentation process. After light filtration, the wine is bottled, where it continues to ferment, giving rise to bubbles and mousse.
