A sanguine juice, from a soil full of sideroliths that you can feel. Polished and almost saline, the fruit is precise, clean, frank and well-defined, tasty and juicy. Everything is in place, but the whole is still a little too wise, a little too young.

About the domain :

Fabien Jouves is an organic grower on the slopes of Trespoux, the highest area of the appellation. His range of wines is pure, respecting the identity of the terroirs, even to the point of claiming the geological origin on the label. The cuvées have the dual advantage of precision and freshness. The new gravity-fed winery is combined with a return to mixed farming, with the planting of truffle trees, lavender, beehives, old orchards and the rearing of free-range black pigs. With the planting of several plots of old "conservatory" grape varieties: cahours, negral, baral, valdiguié pissaïre, magdeleine noire, mérille, grand noir de la calmette, gibert, noual, malpé, jurançon... Fabien Jouves possesses plant material, winemaking tools and talent that place him among the great winemakers of the South-West. His wines are expressive, innovative and, although sulfur-free, always precise and deliciously gourmet.
