About the estate:
Operating an organic vineyard on the hillsides of Trespoux—the highest part of the appellation—Fabien Jouves offers a range of refined wines that respect the identity of the terroirs to the point of highlighting their geological origin on the labels of his bottles. His wines boast the dual qualities of precision and freshness. The recently built gravity-fed winemaking facility is part of a return to mixed farming, featuring the planting of truffle groves, lavender fields, beehives, and traditional orchards, as well as the free-range raising of black pigs under organic certification. With the planting of several plots of old “conservation” grape varieties: Cahours, Negral, Baral, Valdiguié Pissaïre, Magdeleine Noire, Mérille, Grand Noir de la Calmette, Gibert, Noual, Malpé, Jurançon... Fabien Jouves possesses the grapevines, winemaking equipment, and talent that rank him among the great winemakers of the Southwest. His wines are expressive and innovative, and although sulfur-free, they are always precise and delightfully delicious.

Tasted in 2023: A dark wine with purplish to ruby-red highlights. The nose is very interesting, dominated by wild berries accompanied by some animal or toasty notes. The palate offers a lovely texture with enveloping tannins softened by the fruit’s ripeness. A truly enjoyable, full-bodied wine. At 11%, why hold back? Tasted in 2025: The wine has simply gained in elegance; the tannins, already refined in its youth, have mellowed further. Everything else remains unchanged, except that a very fresh note of violet is now more pronounced. It’s very good! The 2022 vintage, tasted in 2025, proved to be perfectly refined, with tannins whose finesse complements the delicate aromas of blueberry and violet!
