A deep, rich wine, born of soil rich in siderolites, which is clearly evident. Refined and almost briny, the fruit is precise, clean, straightforward, and well-defined—flavorful and juicy. Everything is in place, but the wine as a whole is still a bit too restrained, a bit too young.
About the estate:
Operating an organic vineyard on the hillsides of Trespoux, the highest part of the appellation, Fabien Jouves offers a range of refined wines that respect the identity of the terroirs to the point of highlighting the geological origin on the labels of his bottles. The wines boast the dual qualities of precision and freshness. The recently built gravity-fed winery is paired with a return to mixed farming, featuring the planting of truffle groves, lavender fields, beehives, and traditional orchards, as well as the free-range raising of black pigs under organic certification. With the planting of several plots of old “conservation” grape varieties: Cahours, Negral, Baral, Valdiguié Pissaïre, Magdeleine Noire, Mérille, Grand Noir de la Calmette, Gibert, Noual, Malpé, Jurançon... Fabien Jouves possesses plant material, winemaking equipment, and a talent that place him among the great winemakers of the Southwest. His wines are expressive and innovative, and although sulfur-free, they are always precise and delightfully delicious.
