A year of aging in large oak barrels softens Les Acacias, imparting woody aromas on the nose and a delicate crispness on the palate. The radiant fruit gives way to a violet-tinged finish, creating a striking overall impression.

About the estate:

Located on the organic slopes of Trespoux, the highest area of the appellation, Fabien Jouves offers a range of refined wines that respect the identity of the terroirs, even going so far as to indicate the geological origin on the labels of his bottles. The vintages have the dual advantage of precision and freshness. The recent gravity-fed winery is combined with a return to mixed farming, with the planting of truffle trees, lavender, beehives, old orchards, and the rearing of black pigs in the open air under organic certification. Several plots have been planted with old "conservatory" grape varieties: Cahours, Negral, Baral, Valdiguié Pissaïre, Magdeleine Noire, Mérille, Grand Noir de la Calmette, Gibert, Noual, Malpé, Jurançon, and others. Fabien Jouves possesses the plant material, winemaking tools, and talent that place him among the great winemakers of the Southwest. His wines are expressive, innovative, and, although sulfur-free, always precise and deliciously flavorful.

Tasted in 2023: A dark wine with ruby-red and purplish hues. The nose is very interesting, dominated by wild berries accompanied by some animal or toasty notes. The palate offers a lovely texture with enveloping tannins softened by the fruit’s maturity. A truly enjoyable, full-bodied wine. At 11% ABV, why hold back? Tasted in 2025: The wine has simply gained in elegance; the tannins, already refined in its youth, have mellowed. Everything else remains unchanged, except that a very fresh note of violet is now more prominent. It’s very good! The 2022 vintage, tasted in 2025, has matured perfectly, with tannins whose finesse complements the aromatic finesse of blueberry and violet!
