Operating an organic vineyard on the hillsides of Trespoux—the highest part of the appellation—Fabien Jouves offers a range of refined wines that respect the identity of the terroirs to the point of highlighting their geological origin on the labels of his bottles. The wines boast the dual qualities of precision and freshness. The recently built gravity-fed winemaking facility is paired with a return to mixed farming, including the planting of truffle groves, lavender fields, beehives, and traditional orchards, as well as the free-range raising of black pigs under organic certification. With the planting of several plots of old “conservation” grape varieties: Cahours, Negral, Baral, Valdiguié Pissaïre, Magdeleine Noire, Mérille, Grand Noir de la Calmette, Gibert, Noual, Malpé, Jurançon... Fabien Jouves possesses the grapevines, winemaking equipment, and talent that rank him among the great winemakers of southwestern France.
