Traditional method (natural sparkling wine): bottled before fermentation is complete. No addition of tirage or expedition liqueur. Alcoholic fermentation begins in the tank. The wine is bottled while alcoholic fermentation is only partially complete. It resumes in the bottle, creating carbonation. The yeasts are unable to function beyond a certain pressure. Alcoholic fermentation therefore stops naturally. The wine has an alcohol content of 8 to 9° and approximately 20 g of residual sugar.

About the wine:

Made from 100% Aligoté, this wine features very fine, delicate bubbles and a rich balance between the Aligoté’s freshness and its natural sweetness.

About the estate:

Agnès Paquet produced her first vintage in Meloisey in 2001 from a family-owned vineyard in Auxey-Duresses. She has masterfully managed her estate and now oversees 12.5 hectares in the Hautes-Côtes de Beaune, Auxey-Duresses, Chassagne-Montrachet, and Saint-Aubin, where the vines are tended with care according to organic principles. The whites are crisp and refined, and the reds—partially vinified from whole clusters—are precise and full-bodied. Of particular note is the production of a house sparkling wine, made using the traditional method and produced exclusively from Aligoté.

About the estate:

Agnès Paquet founded her estate in 2000 on a plot of land acquired by her family in the 1950s. Located in the Hautes-Côtes de Beaune, she cultivates 9.5 hectares of vineyards, a large portion of which are in Melin, a hamlet of Auxey-Duresses. The transition to organic farming is underway.

For the official price of €13, it's a rip-off (and the capsule is made of metal, to boot). This was my first order from 1j1v... I'm very disappointed.
