La Chablisienne
La Chablisienne, founded in 1923, is the largest cooperative in Chablis and arguably one of the "best in France." It owns approximately 1,200 hectares of vineyards and brings together nearly 300 winegrowers who take meticulous care in cultivating their vines and conduct a rigorous plot-by-plot selection. Over time and across the globe, its white wines have earned an extraordinary reputation.

Deeply committed to the concept of terroir and its most natural expression, La Chablisienne now offers some thirty wines across all appellations (Petit Chablis, Chablis, Chablis 1er Cru, Chablis Grand Cru). It also owns the famous Château Grenouilles, a monopole within the Grenouilles Grand Cru, the rarest of Chablis’s grands crus. The La Chablisienne wine range thus allows the winery to skillfully express all the aromatic characteristics of Chablis’s flagship grape variety: Chardonnay!

La Chablisienne: a winegrowers' association

The economic crisis that followed the end of World War I hit the wine industry particularly hard. Burgundy was not spared, and the difficulties faced by Burgundian winemakers prompted a priest to bring several of them together with a single goal in mind: to sell their wines. Thus, the cooperative winery was founded in 1923 under the name La Chablisienne. Over the years, and especially after World War II, the cooperative worked to advance the techniques of artisan winemakers. La Chablisienne now enjoys a solid reputation both nationally and internationally, producing renowned Chablis wines.

Chablis, a sumptuous dry white wine

The Chablis wine region comprises 11 Appellations d'Origine Contrôlée (AOCs), including Chablis, Petit Chablis, Chablis Premier Cru, and Chablis Grand Cru. Made exclusively from the Chardonnay grape variety, these wines are particularly well-structured and offer a perfect balance between smoothness, power, and depth.
The vineyards are planted on clay-limestone soil with a distinctive feature resulting from the region’s geological history: the presence of a layer of sedimentary rock composed of tiny oyster deposits. It is this characteristic that gives Chablis wines their distinctive minerality.
Each appellation has its own distinct characteristics and reaches maturity at different stages of its development. While Petits Chablis wines need only one to three years to reveal their full potential, Chablis wines require two to five years of aging before they are ready to drink. As for Chablis Premier Cru and Chablis Grand Cru wines, they generally reach their peak after 8 to 10 years.

La Chablisienne wine, an exceptional rarity

Although La Chablisienne wines are available across all four appellations, since 2003 the cooperative has operated a renowned estate that produces an exceptional wine: Château Grenouilles. With just over seven hectares of vineyards, it is one of the most sought-after Chablis Grands Crus. The harvest from plots of old vines is carried out using traditional methods to produce an extraordinary wine that reveals its full potential and aromatic richness only after many years in the cellar.
“Le pas si petit,” “Le Vibrant,” “Le Finage,” “La Pierrelée,” and “Dame Nature” —these are just some of the names chosen by La Chablisienne for its wines from all Chablis appellations.

Cuisine that showcases La Chablisienne wines

Although 2005 showed extraordinary potential for an exceptional vintage, 2004, 2009, and 2010 were also very good years for the vineyard's grapes.
Because each appellation has its own distinct character, food pairings with La Chablisienne wines will vary accordingly. While the Petits Chablis pair well with fresh goat cheese or hard-pressed, cooked cheeses from Savoie, such as Beaufort or Comté, the Premiers Crus pair wonderfully with products more deeply rooted in the local terroir, such as Burgundy snails or andouillettes.
Château Grenouilles, like other Grand Crus, pairs well with a foie gras terrine or lobster.
