In the heart of the Grands Crus region, the Vaudésirs valley is an open book on the geology and history of the Chablis vineyards. This wine has captured all the tension of the vintage, with a present but not excessive acidity, making it a typical representative of a great Chablis: mineral and taut at the same time!

Food and wine pairings

Food and wine pairings

In keeping with the precision and prestige of this grand cru, the best pairings will involve using the finest ingredients, prepared with a touch of daring, combined with a quest for exceptional freshness. Dare to try seasonal asparagus with a mousseline mayonnaise or a zucchini espuma with fresh goat cheese and lemon thyme.

Rated estate (2020 guide) 3 stars (High-quality production, serving as a benchmark in its sector)

About the estate:

Cécilia Trimaille has just taken up residence in Chablis, replacing Matthieu Mangenot at the helm of the Long-Depaquit estate, the Chablis branch of the Bichot family since 1970. The vineyard is one of the most comprehensive in the region, covering 65 hectares, including five of the appellation's seven grands crus (not counting the famous La Moutonne monopole). A tasting here provides a good overview of the diversity of the area's terroirs. The 2017 vintage is good, despite the spring frost, which affected volumes more than quality. With the exception of the disappointing Les Lys premier cru, all the other vintages tasted well.

Rated estate (2020 guide) Selected (Please note that this guide is a ranking and, as such, all the estates listed in it, even those without stars, represent, in our opinion, the excellence of French production.)

About the estate:

A well-known Beaune-based producer, Albert Bichot owns the Long-Depaquit estate in Chablis, which is established on a prestigious range of crus, including the La Moutonne grand cru, which enjoys the sunniest exposure in the appellation. The wines often express a roundness and generosity that makes them accessible when young. While the range appears more consistent, the expression of the terroirs could certainly gain in intensity and precision. Cécilia Trimaille, 31, the new estate manager, will strive to support this progress.
