70% destemming, transfer to temperature-controlled stainless steel tanks: cold pre-fermentation maceration for 5 to 6 days, initiation of alcoholic fermentation using indigenous yeasts (28°C), gentle pumping over for mild extraction, maceration for approximately 3 weeks, gentle pressing, followed by malolactic fermentation

About the estate:

The village of Saint-Bris, in the Yonne department, is home to several members of the Bersan family. Founded in 2009 following a family split, the estate owned by Jean-Louis and Jean-Christophe comprises 22 hectares spread across the communes of Chablis, Irancy, and Saint-Bris, which are farmed organically (certified since 2012).
