The grapes are pressed using a pneumatic press; the must is left to settle statically at a low temperature (12°C) for approximately 24 hours; the clear juice is then transferred to stainless steel tanks for alcoholic and malolactic fermentation under temperature-controlled conditions (20–22°C)

About the estate:

In 1946, Francis Auvigue joined forces with three other winemaker friends to establish a small wine merchant firm specializing in Pouilly-Fuissé. Jean-Pierre and Michel, Francis’s grandsons, took over in the mid-1970s and expanded into other appellations of the Mâconnais region. In 2017, the company acquired a 7-hectare vineyard estate and moved into the former church in Fuissé, which was renovated into a winemaking facility and tasting room. Today, Sylvain Brenas, Francis’s great-grandson, and Céline Hirsh are at the helm.
