Sedimentary rocks from the Cretaceous period, clay-limestone and flint type, 3 plots of old vines located in the village of Solutré, classified as 1er cru from the 2020 harvest onwards.

The grapes from these plots are produced using organic farming methods, without synthetic products and on plowed soil.

Wine making

Whole clusters are pressed using a pneumatic press, and the musts are left to settle statically for 24 hours. The clear juices are then transferred to barrels for alcoholic and malolactic fermentation using indigenous flora.

Livestock farming

11 months on lees in oak barrels with regular stirring, the frequency of which is adapted according to the characteristics of the vintage.

About the estate:

In 1946, Francis Auvigue joined forces with three other producer friends to create a small wine merchant specializing in Pouilly-Fuissé. Jean-Pierre and Michel, Francis' grandsons, took over in the 1970s and developed other appellations in the Mâconnais region. In 2017, the company took over a 7-hectare vineyard and moved into the former church of Fuissé, which was converted into a winemaking, tasting and sales facility. Today, Sylvain Brenas, Francis's great-grandson, and Céline Hirsh are at the helm.
