Winemaking

Whole-cluster pressing is performed using a pneumatic press, and the musts are left to settle statically for 24 hours. The clear juice is then transferred to barrels for alcoholic and malolactic fermentation, carried out by the wine’s natural yeast and bacteria.

Aged on the lees for 11 months in oak barrels with regular stirring, the frequency of which is adjusted according to the characteristics of the vintage

About the estate:

In 1946, Francis Auvigue joined forces with three other winemaker friends to establish a small wine merchant firm specializing in Pouilly-Fuissé. Jean-Pierre and Michel, Francis’s grandsons, took over in the mid-1970s and expanded into other appellations of the Mâconnais region. In 2017, the company acquired a 7-hectare vineyard estate and moved into the former church in Fuissé, which was renovated into a winemaking facility and tasting room. Today, Sylvain Brenas, Francis’s great-grandson, and Céline Hirsh are at the helm.
