The grapes are pressed immediately, and the juice is left to settle statically; the clear juice is then transferred to oak barrels (1 to 3 years old) for alcoholic and malolactic fermentation

Aged for 11 months in barrels, followed by 5 months of aging in stainless steel tanks (the frequency of stirring is adjusted according to the characteristics of the vintage)

About the wine:

About the estate:

In 1946, Francis Auvigue joined forces with three other winemaker friends to establish a small wine merchant firm specializing in Pouilly-Fuissé. Jean-Pierre and Michel, Francis’s grandsons, took over the business in the mid-1970s and expanded into other appellations of the Mâconnais region. In 2017, the company acquired a 7-hectare vineyard estate and moved into the former church in Fuissé, which was renovated into a winemaking facility and tasting room. Today, Sylvain Brenas, Francis’s great-grandson, and Céline Hirsh are at the helm.
