Selection of specific vineyard plots, maceration of the berries for 2 days to allow them to swell, gentle pressing to obtain a high-density must, fermentation in new Hungarian oak barrels (100%) for up to 8 weeks

Production method

A meticulous process possible only in exceptional vintages and under conditions conducive to Botrytis infection of the grapes (the same method has been used for hundreds of years). Aszú refers to the dried grapes, and "puttonyos" means "basket"; the number preceding it—here "5"—indicates the number of 25-kg baskets of botrytised grapes added to a 136-liter "Gönc" barrel of must (unfermented grape juice)—so the higher the number, the higher the sugar content in your Tokaji!
