Selective harvesting, maceration of the berries for 2 days to allow them to swell, gentle pressing to obtain a high-density must, fermentation in new Hungarian oak barrels (100%) for up to 8 weeks.

Method of preparation

A meticulous process that is only possible in exceptional vintages and conditions that favor Botrytis on the berries (the same process has been used for hundreds of years). Aszù refers to dried berries and "puttonyos" means "basket." The number before it, in this case "5," indicates the number of 25kg baskets of botrytized grapes added to a 136L "Gönc" barrel of must (unfermented grape juice) - So the higher the number, the higher the sugar content in your Tokaji!

Livestock farming

Aged for two years in Hungarian barrels of 136 and 200 liters, then refined in bottles for two additional years.
