Total destemming, maceration for 4 hours at 5°C before pressing, static settling for 24 hours before yeasting the must, alcoholic fermentation at 15°C, no malolactic.

Fresh and elegant, aromas of white fruits and white flowers, aniseed and menthol notes, followed by mango and pineapple.

About the domain :

In 1995, oenologist Laurent Calmel joined forces with Jérôme Joseph to found a trading house specializing in Languedoc-Roussillon terroir wines. The duo launched their label in 2007. He selects the plots, vinifies and ages the cuvées.
