Long, gentle direct pressing (approximately 3.5 hours), followed by racking after 48 hours of cold settling, inoculation with a neutral yeast, and fermentation in temperature-controlled 600-liter oak demi-muids (maintained between 15 and 18 °C) for 3 weeks

Livestock farming

Aged for 12 months on fine lees with regular stirring, racked and blended the following summer, clarified with bentonite (natural clay), filtered through cellulose sheets, and bottled after adjusting the CO2 levels

About the wine:

One hectare of Sauvignon Blanc grown on marl soil, aged in demi-muids—the result is a round, crisp wine, full of charm and impact.

About the estate:

Julien and Clément Raimbault cultivate 21 hectares on the hillsides of Maimbray and Sury-en-Vaux, in clay-limestone soils. Their highly consistent lineup features well-rounded wines in both red and white, with reds that combine power and elegance and whites that are pure and refined. All at very reasonable prices. A sure bet.

The Raimbault brothers, Julien and Clément, embody the new generation of Sancerre winemakers. Over the past few vintages, we’ve been delighted to see a more relaxed approach to the wines’ expression. They’re now more laid-back and indulgent, while retaining the precision that has become their trademark. 2022, a sunny vintage, is a masterful balancing act! 2023, unsurprisingly, has produced wines that are more refined and elegant.
