Long, gentle direct pressing (approximately 3.5 hours), followed by racking after 48 hours of cold settling, inoculation with a neutral yeast, and fermentation in temperature-controlled 20-hectoliter casks and 600-liter demi-muids

Livestock farming

Aged for 12 months on fine lees with regular stirring in large oak casks and demi-muids; racked and blended the following summer; clarified with bentonite (natural clay); filtered through cellulose sheets; and bottled after CO2 adjustment

About the estate:

Julien and Clément Raimbault cultivate 21 hectares on the hillsides of Maimbray and Sury-en-Vaux, in clay-limestone soils. Their highly consistent lineup features well-rounded wines in both red and white, with reds that combine power and elegance and whites that are pure and refined. All at very reasonable prices. A sure bet.

The Raimbault brothers, Julien and Clément, embody the new generation of Sancerre winemakers. Over the past few vintages, we’ve been delighted to see a more relaxed approach to the wines’ expression. They’re now more laid-back and indulgent, while retaining the precision that has become their trademark. 2022, a sunny vintage, is a masterful balancing act! 2023, unsurprisingly, has produced wines that are more refined and elegant.
