In the process of converting to organic farming. Using biological pest control since 2018. Soil cultivation, natural grass cover, no chemical herbicides, no fungicides.

At peak ripeness

Winemaking

Long, gentle direct pressing (approximately 3.5 hours), followed by separation of the juice and separate vinification. Racking after 48 hours of cold stabilization (8°C). Inoculation with a neutral yeast. Fermentation in temperature-controlled stainless steel tanks at 15°–18°C for 3 weeks.

Livestock farming

Aged on fine lees with regular stirring, racked and blended the following spring, fined with bentonite (natural clay), filtered through cellulose discs, and bottled after adjusting the CO2 levels

Thiole, with notes of blackcurrant buds, citrus, and yellow fruits

Full-bodied, smooth, mineral, and fruity. Harmonious and fresh.

Julien and Clément Raimbault cultivate 21 hectares on the hillsides of Maimbray and Sury-en-Vaux, in clay-limestone soils. Their highly consistent lineup features well-rounded wines in both red and white, with reds that combine power and elegance and whites that are pure and refined. All at very reasonable prices. A sure bet.
