In the process of converting to organic farming since 2020. Using biological pest control since 2018. Soil cultivation, natural grass cover, no chemical herbicides, no fungicides.

Winemaking

Long, gentle pressing (approximately 3.5 hours), with separation of the juice and separate vinification, followed by racking after 48 hours of cold stabilization. Inoculation with a neutral yeast, fermentation in temperature-controlled 600-liter demi-muids.

Livestock farming

Aged for 12 months on fine lees with regular stirring in demi-muids. Fining with bentonite (natural clay), filtered through cellulose plates, and bottled after adjusting the CO2 levels.

About the estate:

Julien and Clément Raimbault cultivate 21 hectares on the hillsides of Maimbray and Sury-en-Vaux, in clay-limestone soils. Their highly consistent lineup features well-rounded wines in both red and white, with reds that combine power and elegance and whites that are pure and refined. All at very reasonable prices. A sure bet.

The Raimbault brothers, Julien and Clément, embody the new generation of Sancerre winemakers. Over the past few vintages, we’ve been delighted to see a more relaxed approach to the wines’ expression. They’re now more laid-back and indulgent, while retaining the precision that has become their trademark. 2022, a sunny vintage, is a masterful balancing act! 2023, unsurprisingly, has produced wines that are more refined and elegant.
