After rigorous sorting, the juice was distributed for vinification into various containers (truncated conical tanks, concrete tanks, and stainless steel tanks—about one-third in each). Following malolactic fermentation in early November 2016, the wine was transferred to various containers (amphorae, barrels, concrete tanks, demi-muids, and stainless steel tanks) for the aging phase.

Livestock Farming

Part of the batch is aged in the same way as the Arcane Le Pape, using the Vinarium technique: the wines are transferred to small 200-liter barrels, which are then submerged in wine.

The full-bodied and voluminous 2016 Châteauneuf-du-Pape Arcane La Papesse displays surprising elegance for such a powerful wine. Remarkably dark and youthful in appearance, it offers notes of leather, cedar, and dried spices, all set against a backdrop of black cherries and plums. The tannins are fine and silky on the mid-palate, fading gently into a lingering, slightly powdery finish. Impressive, with at least another decade of aging potential ahead.
