The grapes underwent rigorous sorting, and the juice was divided among various containers for fermentation (truncated cone tanks, concrete tanks, and stainless steel tanks—about one-third in each). Following malolactic fermentation in early November 2016, the wine was transferred to various containers (amphorae, barrels, concrete tanks, demi-muids, and stainless steel tanks) for aging.

Livestock farming

Part of the batch is aged in the same way as the Arcane Le Pape, using the Vinarium technique, in which the wine is transferred to small 200-liter barrels that are themselves submerged in wine

The full-bodied and voluminous 2016 Châteauneuf-du-Pape Arcane La Papesse displays surprising elegance for a wine of such power. Remarkably dark and youthful in appearance, it offers notes of leather, cedar, and dried spices, all against a backdrop of black cherries and plums. The tannins are fine and silky in the mid-palate, fading gently into a lingering, slightly powdery finish. Impressive, with at least another decade of aging potential ahead.
