Located at the southernmost tip of the Beaune appellation, bordering Pommard, this mid-slope parcel has a gentle, east/southeast-facing slope and covers 14 hectares; it was one of the very first properties acquired by Maurice Drouhin (son of the founder) in 1920, with clay and limestone soils (upper section: stony soil; center of the vineyard: marl-limestone bedrock)

Wine Making

Whole-cluster harvest (20–50% depending on the vintage), fermentation and maceration (2–3 weeks) in small open tanks, moderate punching down and pumping over, use of indigenous (natural) yeasts, pressing in a vertical press, separation of the press residue based on tasting notes

Deep ruby color, bright core

Nose

Intense and complex, with aromas of blackberry and raspberry, along with hints of smokiness and licorice; as it opens up, subtle notes of black pepper, dark tobacco, and forest floor emerge

Palate

Frank and full-bodied, with refined, silky tannins; dense, it develops a certain roundness and sublime depth, lively and very noble, with a full and deliciously complex finish

About the estate:

This winery is now led by Frédéric Drouhin, supported by his sister Véronique for the wines and by his brother Philippe in the vineyards. In July 2013, it opened a wine bar in the heart of Beaune. It has found its stride and is establishing itself as a sure bet. The winery draws on a biodynamic vineyard that is particularly rich in great white wines, both in the Côte-de-Beaune and in Chablis (wines sold under the Drouhin-Vaudon label), including the famous Clos des Mouches.
