Careful sorting, whole-cluster harvest (20–50% depending on the vintage), fermentation and maceration for 2 to 3 weeks in small open tanks, regular punching down and pumping over, use of indigenous (natural) yeasts, pressing in a vertical press, and separation of the press residue based on tasting

About the estate:

This winery is now led by Frédéric Drouhin, supported by his sister Véronique for the wines and by his brother Philippe in the vineyards. In July 2013, it opened a wine bar in the heart of Beaune. It has found its stride and is establishing itself as a sure bet. The winery draws on a biodynamic vineyard that is particularly rich in great white wines, both in the Côte-de-Beaune and in Chablis (wines sold under the Drouhin-Vaudon label), including the famous Clos des Mouches.
