Careful sorting, whole-cluster harvesting (20–50% depending on the vintage), fermentation and maceration for 2–3 weeks in small open tanks, regular punching down and pumping over, use of indigenous (natural) yeasts, pressing in a vertical press, and separation of the press run based on tasting

Aged for 14 to 18 months in oak barrels (25% of which are new)

About the estate:

The estate is now led by Frédéric Drouhin, supported by his sister Véronique for the wines and his brother Philippe in the vineyards. In July 2013, it opened a wine bar in the heart of Beaune. It has found its stride and has established itself as a sure bet. The estate draws on a biodynamic vineyard particularly well-stocked with great white wines, in the Côte-de-Beaune as well as in Chablis (wines sold under the Drouhin-Vaudon label), including the famous Clos des Mouches.

Generous aromas of red berries, with notes of dark chocolate and pepper. A mature, well-structured wine for this appellation, though its moderately dry tannins are already well integrated. A long, elegant finish. Ready to drink now, but will reach its peak starting in 2024.
