A clay-limestone soil with a predominance of clay, on a gently sloping southeast-facing hillside south of the village of Nuits-Saint-Georges. The Premier Cru Aux Perdrix is one of the finest terroirs in the Nuits-Saint-Georges appellation. The estate owns nearly all (99%) of the plot, effectively holding a near-monopoly. Domaine des Perdrix is the sole producer from this terroir

Winemaking

Prior to alcoholic fermentation, a cold pre-fermentation maceration lasting 4 to 6 days is carried out to help extract the phenolic compounds. The grapes are destemmed beforehand. The maceration then lasts 15 days, during which the wine is punched down without pumping over.

About the estate:

Run by the Devillard family, who also own Château de Chamirey in Mercurey, the vineyard is situated on remarkable terroirs in the southern part of the Côte de Nuits, and its grapes are vinified in the spirit of modern wines, seeking high ripeness and deep, voluptuous textures. The results have been impressive in recent years, even at the village level, with wines that are now very refined—a departure from the more robust styles we used to know. The 2018 vintage has captured all its potential here; these will be wines for aging, and indeed for very long aging in the case of the Nuits and Échezeaux. There is also a delightful red Burgundy.

About the wine:

Tasted from the barrel. Rich black fruit with a tarry note on the nose; this might lead you to believe it was Nebbiolo rather than Pinot. Wonderfully aromatic on the palate with a vegetal note that leaves a long and satisfying aftertaste, ending with a finish featuring floral notes of juniper berries. Best enjoyed between 2022 and 2037.
