Hand sorted, 80% de-stemmed, cold pre-fermentation maceration for 4 to 6 days, followed by 15 days maceration, alcoholic fermentation with indigenous yeasts.

Breeding

19 months in 228-litre Burgundy barrels (30% new), then 2 months in vats

Nose

A "terrien" character typical of the terroir and magnified by this very old plot of land, complexed by scents of blackcurrant, black cherry and slightly leathery notes.

Mouth

Silky tannic structure, in harmony with the terroir, long, fresh and fruity finish.

About the domain :

Run by the Devillard family, who also own Château de Chamirey in Mercurey, the vineyard is located on remarkable terroirs in the south of the Côte de Nuits, and its production is vinified in the spirit of modern wines, seeking high grape maturity and deep, voluptuous textures. The results have been convincing in recent years, starting with the communal appellations, with very fine juices when we knew them to be rather solid. All the possible fullness of 2018 has been captured here, and these will be wines for laying down, or even very long laying down for the nuits and the échezeaux. Also a lovely red Burgundy.
