Nestled above the old village of Davayé, the “Chailloux” vineyard enjoys an ideal south-southeast exposure. Planted in 1971, this vineyard is now expressing its full potential. Set on clay-limestone gravelly soil, it is pruned using the “petite arcure du Mâconnais” method.

Slow, low-pressure pneumatic pressing. Natural static settling for 72 hours at very low temperatures. Alcoholic fermentation for 7 months in oak barrels (70%) and stainless steel tanks (30%), without the addition of yeast. Spontaneous malolactic fermentation.

About the estate:

This vineyard, located in the heart of Davayé’s finest terroirs, is owned by the Mâcon Davayé Wine School. For several years now, it has been courageously managed using organic farming methods, covering no less than 16 hectares, primarily within the Saint-Véran appellation. The winemaking approach here has a significant impact on the style of the wines, with very unadorned musts that undergo prolonged fermentation at low temperatures. The result is a modern and alluring profile. Of note is a rare and more original selection of reds that we were unable to taste—and, as a side note, some highly commendable goat cheeses!

About the estate:

The Mâcon-Davayé wine-making high school has been training winemakers from Burgundy and beyond for many generations. The adjacent vineyard (16 ha) is farmed organically, and Frédéric Servais, the cellar master, aims to produce wines that are as “natural” as possible.
