About the estate:
This estate, located in the heart of Davayé's finest terroirs, is owned by the Mâcon Davayé wine school. For several years now, it has been courageously run as an organic farm, with no less than 16 hectares, mainly in the Saint-Véran appellation. The winemaking approach here has a significant impact on the style of the wines, with very stripped-down juices undergoing prolonged fermentation at low temperatures. The result is a modern and seductive profile. It is worth noting that there is a rare and more original production of reds that we were unable to taste, and, as an anecdote, some highly esteemed goat's cheeses!

About the estate:
The Mâcon-Davayé wine school has been training winemakers from Burgundy and elsewhere for many generations. The adjoining estate (16 hectares) is organically farmed, and Frédéric Servais, the cellar master, aims to produce wines that are as "natural" as possible.

Fresh and mineral, yet well-balanced and full-bodied on the palate, this wine is a good introduction to the more ambitious wines now being produced in this long-underrated appellation. An interesting touch of chalky tannins adds extra depth on the finish. Made from organically grown grapes. Drink now or cellar.
