"A regal Chardonnay"

The old vines of Clos du Château, one of the finest terroirs in the Poncetys vineyard, produce a seductive and delicate white wine. The nose opens with aromas of mango, followed by woody, smoky, and mineral notes. The full-bodied palate perfectly captures the terroir through hints of spice, weathered rock, and a touch more mango. The finish is long, clean, and crisply acidic. It’s enough to make your mouth water!

About the estate:

This vineyard, located in the heart of Davayé’s finest terroirs, is owned by the Mâcon Davayé Wine School. For several years now, it has been courageously managed using organic farming methods, covering no less than 16 hectares, primarily within the Saint-Véran appellation. The winemaking approach here has a significant impact on the style of the wines, with very unadorned musts that undergo prolonged fermentation at low temperatures. The result is a modern and alluring profile. Of note is a rare and more original selection of reds that we were unable to taste—and, as a side note, some highly commendable goat cheeses!

About the estate:

The Mâcon-Davayé wine-making high school has been training winemakers from Burgundy and beyond for many generations. The adjacent vineyard (16 ha) is farmed organically, and Frédéric Servais, the cellar master, aims to produce wines that are as “natural” as possible.
